APPLE STACK CAKE

Dried Apple Stack Cake

bullet 3/4 cup shortening
bullet 1 cup sugar
bullet 1 cup molasses
bullet 3 eggs
bullet 6 cups all-purpose flour
bullet 2 tsps baking powder
bullet 1/2 tsp soda
bullet 1 tsp salt
bullet 3 tsp ground ginger
bullet 1/2 tsp ground cinnamon
bullet 1/2 cup buttermilk
bullet 1 tsp vanilla extract
bullet apple filling

 

Cream shortening and sugar until light and fluffy; add molasses, mixing well.  Add eggs, one at a time, beating well after each addition. Combine dry ingredients; add to creamed mixture alternately with buttermilk, beating well  after each addition. Add vanilla, blend well. Place dough on a floured  surface; work in enough flour to make dough evenly over bottom of a cake pan.

Bake at 350 degrees F for 12 to 15 minutes or until lightly browned. Cool slightly; remove from pan. Spoon a small amount of apple filling over a cake layer; top with another layer. Repeat until all layers are used. Wrap or store in an airtight contained; let stand overnight before serving.

Apple Filling:

bullet 1-1/2 lbs. dried apples; cook and drain.
bullet 1-3/4 cups brown sugar, firmly packed
bullet 3/4 cup granulated sugar
bullet 1 tablespoon cinnamon

bullet 2 cups white sugar
bullet 1 cup shortening
bullet 2 eggs
bullet 1 teaspoon baking soda
bullet 3 teaspoons baking powder
bullet 6 cups all-purpose flour
bullet 1 teaspoon salt
bullet 1/2 cup buttermilk
bullet 2 teaspoons vanilla extract
bullet 2 pounds dried apples, cooked and mashed
bullet 1 3/4 cups packed brown sugar
bullet 4 teaspoons ground cinnamon
bullet 1 teaspoon ground cloves
bullet 1 teaspoon ground allspice

 Directions   

1 Preheat oven to 450 degrees F (230 degrees C). Grease and flour six 8-inch pans.

2 In a large bowl mix together white sugar, shortening, eggs, soda, baking powder, flour, salt, buttermilk, and vanilla. Divide batter into 6 equal parts. Press into prepared pans.

3 Bake at 450 degrees F (230 degrees C) for ten minutes.

4 To Make Filling: To the cooked and mashed apples, add the brown sugar, cinnamon, cloves, and allspice, and mix. Layer 1 cake, spread filling between layer on top and sides. Do this with each of the 6 layers. Let stand at least 12 hours before cutting.

A shortcut Version of Apple Stack Cake

 I love apple stack cake myself. Since I haven't seen the cheat version yet I figured I'd send it in.

bullet 1 package Graham Crackers
bullet 1 Large jar Apple butter

On a plate slather two pieces of whole graham crackers with butter and lay side by side on the plate with the buttered side down. Then slather the top of the first two crackers. Continue adding layers until you reach the top. Then frost the top and sides. Make sure your generous with the butter so to make sure all the crackers have amble amount of moisture to soak up. Cover and Refrigerate for at least 24 hours. Trust me this is the next best thing.
